Greek Meatloaf

I have been on a total Greek food kick for the past three or four months. I love how its the healthy cousin to Italian food. I get a lot of the same flavors I love in Italian food, without all the guilt.

Turkey Feta Burgers are hands down a favorite now in our house. I make a bunch of patties ahead of time and then freeze them individually so when we need a quick lunch, we just defrost and grill them up. Super simple.

There is a little Gyro stand (which by the way, is apparently pronouned like the currency, euro) at my work. I literally go there 2-3 times a week to get a greek salad. Once a week I splurge on calories and get the beef & lamb plate. It comes with some rotisseried beef and lamb with pita and the greek salad. TO. DIE. FOR.

I decided to combine the beef and lamb in this meatloaf. I had to tell Jon it was all beef because he claims to not like lamb. I love how I still need to trick him into eating certain foods. I found it incredibly tasty, I hope you all agree.

1 lb ground beef
1 lb ground lamb
1/4 cup onion, finely diced
3 cloves garlic, finely minced
2 tsp lemon zest
2 tbsp lemon juice
2 eggs
3/4 cup breadcrumbs
1 1/2 cup feta cheese
1/2 cup milk
1 tsp salt
1 tsp pepper
1/2 tsp thyme
1/2 tsp cumin
1/2 tsp oregano

Preheat oven to 350 degrees. In a large mixing bowl, combine all ingredients until well combined. Form into loaf on baking sheet. Cook for 40-50 minutes, until internal temperature is 160 degrees.

Turkey Burgers with Creamy Feta Dressing

Remember the time I professed my love for feta cheese? It grew to a new level when I made these burgers with this sauce. The burgers are turkey because I'm not a huge beef fan. I honestly don't think you'll miss the beef even if you prefer it over ground turkey. The sauce is on the tangy side, you may want to work the lemon juice in a little at a time depending on how tangy you like it. If you are a beginner cook and you want to knock the socks off people who think you don't know what you're doing, start with these. They are so easy to throw together. They're simple, but have a different taste than your standard burger. People will be wow'd. I don't care if wow'd isn't grammatically correct, they'll be WOW'D!



Recipe yields 6-8 burgers depending on size you make them
Burgers:
6-8 hamburger buns
1 lb ground turkey breast
1 cup feta cheese
1/4 cup chopped onion
3 cloves garlic, finely minced or hand grated
1 tsp lemon zest
1 tbsp lemon juice
1 large egg white
2 tbsp panko breadcrumbs
1/2 tsp salt
1/2 tsp pepper
1/4 tsp thyme
1/4 tsp cumin
1/4 tsp sage

Dressing:
1 cup feta cheese
1 cup Greek yogurt
2 garlic cloves, finely minced or hand grated
1 tsp lemon zest
1-2 tbsp lemon juice (to taste)
1/8 tsp cumin
Salt and pepper to taste
Using a food processor, combine feta, yogurt, garlic, lemon zest, lemon juice, cumin, salt and pepper until smooth and combined.

In a large mixing bowl, combine turkey, feta, onion, garlic, lemon zest, lemon juice, egg whites, panko, salt, pepper, thyme, cumin and sage. Form into burger patties, making the middle a little thinner so when they cook, the middle doesn't puff up unevenly.

Cook on grill or griddle for 4-5 minutes per side, until cooked throughout.

*Just a warning, turkey burgers usually stick more than a regular burger would, so for best results, use a non-stick griddle with lots of cooking spray or olive oil*

Feta-licious Pizza

I'm like seriously in love with feta cheese. I could eat feta cheese for breakfast, lunch and dinner. I decided I wanted to use these nifty 100 calorie wheat wraps I had picked up at Costco to make pizza. So, I decided to make a Greek inspired pizza featuring my love, feta cheese. The nice part is that the wraps are perfect individual sized pizza, so I made myself the recipe I'm sharing and for Mr. Picky I made a cheese pizza.

The wraps are perfect for crispy crust pizza. It only took about 30 minutes for this entire recipe which was awesome. Really nice and easy lunch for me to throw together. Hope you all enjoy it and the new layout!



Feta-licious Pizza

1 whole wheat wrap * I used Flat Out Brand *
1 tsp olive oil
1/4 tsp granulated garlic
1/2 cup onion, sliced
1/2 cup mushrooms, sliced
1/2 cup spinach leaves
1/2 cup part-skim mozzarella cheese, shredded
1/4 cup feta cheese
1/4 cup romano cheese, grated

Preheat oven to 400 degrees. Brush wrap with olive oil, then sprinkle on granulated garlic. Spread onion, mushrooms and spinach over wrap. Sprinkle cheeses over vegetables. Bake in oven for 20-25 minutes until cheese is golden brown. Enjoy!
